A thing I learned growing up in an earnest but cultic knowledge milieu is that when someone tells you that you're not allowed to try to understand how something* works, you might be in a cultic knowledge milieu.
I guess my whole bet in this late age of my own experience is that it's useful to try to understand our socio-political-technical stack and also ourselves inside of them and why we feel the way we feel. If that doesn't work, I'm going to drown my computers and start a killer gluten-free bakery.
Anyway: down with xanthan gum, it’s gross and unnecessary, moderate amounts of well-hydrated psyllium will get you everything except real croissants, which we simply cannot have.
