Climate change will hurt the many ecosystems. Defending current livestock production (which drives climate change), will therefore not protect them.
A paper I just read: Yes, cattle is a key driver of climate change. But grassland has aesthetic, recreational, cultural & historical value, and cattle prevents it from returning into wilderness & forests. So on balance, cattle is not that bad. (All a question of priorities, I guess.)
And the point was how e.g. a subjective "aesthetic" value can counterbalance the impacts of climate change.
