I don't love the art style particularly, but I think it's fascinating that because Ocarina and Majora's Mask landed right when they did, they left enough room for interpretation for players to completely misread what the creators had attempted to portray.
OoT Remake should prove once and for all that whatever you read into the graphics of the N64 Zeldas, what they were going for was something much closer to children's animation. And if you look at the horrifying townsfolk in Twilight Princess, you can still see why.

Every -single- one of these "early visualization" AI excuses is just describing concept art, which is typically made by human beings called concept artists.
Concept art is still art that was used in the development of the game.
I've quit nicotine more than once and it pales in comparison for me to the mental effort required not to constantly want to get a snack or order food when I'm feeling hungry (which is basically all the time). This used to not be so much of a problem when I had the metabolism of a blast furnace.
