Reading Dishoom, named for "Bombay comfort food" restaurant. Beautiful travelogue of a book, nice detailed recipes. Especially grateful for "our restaurant does this, at home you can substitute that". So many restaurant cookbooks omit that step. Excited to make lamb raan. Index unsatisfactory ☹️
