It's been a long time since I thought about media regulation stuff seriously (I have a masters degree in it!) but I am really struggling to process the fact that the government have moved to a flat out age ban rather than trying some sort of more active, interventionist regulation.

Yeah it's more basic in that Bushmill's is in Antrim and Jameson's is in Cork. Both originally Protestant businesses I believe. The one genuine confessional split was that Murphy's was set up as a Catholic-owned alternative to Beamish (though this doesn't in the slightest affect who drinks what)
