Vanran - Vanran is one of the more ambitious demos i've tried. Unfortunately, as such, it struggled from poor performance making it hard to finish. In the little bit that didn't stutter to hell, the combat felt fluid with forgiving parry timing, and a cool tendril grab for variety. It has promise!

Project P.I.T.T. - You can catch my eye with anything involving rubber duckies. That's just a fact. In this game you churn out (literally) rubber duckies and feed them to a hole in the ground. But after finding a note saying "Don't Go Up" written on the wall, my interest is piqued for more.
Pogopa - What if Carl from Up was in Getting Over It With Bennett Foddy? Not much to say here, i'm sure when it fully releases, you'll see plenty of Youtubers with angry face thumbnails and titles like "Is this HARDER than Bennett Foddy?!?!"
Controls well and the balloon hat is a fun mechanic.
Normal Golf Game - Are you bad at golf? Do you want to feel even worse? Then this game is for you! Using physics to control your swing, you feel like Happy Gilmore before he meets Chubbs. You're not just playing golf however, you're completing challenges with a ball and a club. Frustrating but fun!
Poly Fighter - This is a single-player roguelike fighting game. We all know what roguelikes entail, so i'll just say the combat feel tight and is fun if a little basic. I'm sure the more moves and stuff you unlock it gets more in-depth. You can tell this was made by fans of the genre.
Mexican Ninja - In this chaotic 2.5D roguelike beat ’em up, you take in the silly, yet lovingly crafted world of Nuevo Tokyo as you slash thru Narkuzas (Narcos + Yakuzas, yes, the whole game is like this). A fantastic art style, satisfying combat & a memelord sense of humor makes this one to watch.
