Why yes, I *am* the Mushroom Man.

And this albino shoot would be the result of a quirk of cell division where an axillary meristem formed from just one layer.

Actually I read up on this a little and it's even cooler. The variegation in this mint variety comes from a stable clonal condition where one layer of meristem cells has chloroplasts that do not produce chlorophyll.
A somatic mutation seems to have occurred in my pineapple mint yielding a single albino shoot.
