If the missing middle is actually an intentional choice and not a "couldn't quite figure out what would go there at the time" situation, the best I can guess is that he wants you to look around in a circle for the recursive paradox instead of inward to a smaller version of the guy
I think I would be willing to accept that more if Escher's other stuff wasn't all exceptionally precise in their depictions of illusions. It seems odd that this would be the one piece that goes against that.

I watched the 3b1b video about this Escher drawing and I think its incredible that he was able to do this by hand but this piece also just kinda annoys me cause I don't think the illusion actually works well without the middle part that explains what's happening
