In this 2-dim space, some of the cuisines cluster rather clearly by region. Few interesting stand outs, e.g. the British near the Indonesian and Malaysian.
I'm guessing the Indian, Turkish, Lebanese, and Moroccan are the 'new Italian', widely recognized and accessible.
