This wouldn't be as big of an issue to me if the games dropped the focus on combat and looked at ways of expanding exploration and making it more engaging. The strange worlds and characters have always been the big draw for me, I could care less about flashy combat.
These games would gain a lot from looking back to Demon's Souls and the way it compensated for it's limited animation budget with actually engaging boss arenas+mechanics.
With most boss fights taking place in a round open arena and roll direction being trivial in determining whether or not you survived an attack, then we might as well be fighting on a 1d axis surrounded by pretty but meaningless environments.

Imo action games (specially souls) have been leaning way too much into quick reaction timing to animation tells and it's all becoming a bit dull to me.
