I wonder what people think of as 'British' cuisine? Because the British food scene has utterly transformed in the last 20-30 years. My personal favourites are the multicultural fusion dishes. Things like Lamb Balti, Singapore-Style Noodles, or London-Style Sourdough Pizza.
