He is sort of a mastermind character, and he knew there were two options
The first is that he takes care of a loose end where his dead friends guilt can’t betray his cannibalism cult
The second is Maynard’s fight or flight response kills him, and the shock kills his taste for blood.

I should also note that Dallas was a very unhappy person. I didn’t show how much, but it’s likely he missed a vital spot on purpose when he realized his friend can’t be part of his plans.
Maynard’s subsequent vengeance is revenge for how much the world was hurting Dallas, starting with the enablers
