I headcanon that every Espada and former ones' saliva has unique effects like Nel's healing spit.
For me, I'd say Ulquiorra's is an anesthetic that doesn't really numb the body. It's like the opposite of Mayuri's shikai. It just turns off the pain receptors at the afflicted part.
