soft shell crabs are just crabs that are harvested directly after they molt. all crabs come out of their old shell soft, take on a ton of water to swell up, and then harden the shell back up around their newly bigger bodies.

I might be fuzzy on these details, but female blue crabs will only molt in the presence of a male. so on farms, females will be segregated until they're all ready to molt, male pheromones are introduced, and then they allll molt at once and are immediately killed so we can enjoy them fried whole :)
