🔬 This week in my course “Physics of Living Systems - in the Lab and Kitchen”, we explored viscosity & its microscopic origins. 👨‍🍳 Chef Yaniv Gur Arieh demonstrated different methods for sauce thickening: emulsions, gelatinization, reduction & modernist polymers. So much (tasty) soft matter physics!
