I wish writing for funsies was more financially sound a choice to make. But I don't think the system we live in wants me to have fun.
Honestly, this is truly an excellent read and if you haven't picked it up yet, I really can't recommend it enough, especially if you like Gothic horror.
Food for Vocalists and the Grand Soloist includes meals made with ingredients or techniques that aren't available within Chorus-controlled lands. And an expectation of them paying for and hosting an open-to-all feast once or twice a year.
Yul-Nagat eats the souls of Chorus members on death.

I've implied it before, but the Chorus does have large, large segments of its population dedicated solely to keeping the food supply steady. The stipend includes a weekly grain ration, but the rest a member will have to buy from a market.
So diet can vary based on rank.

The typical Score gets decent, if bland and repetitive, meals. Markets do have spices, but they're usually more expensive than a typical Score can afford regularly. Beer is the standard drink.
Instruments and Harmonies get more or less the same, but they can afford spices and more variety.

A Harmony and higher also has better access to foods from outside the region a member is in. So they're not limited to whatever is actually available where they're assigned, allowing for less repetitive diets.
At Harmony rank and higher, they can get local wines or whiskey instead of beer.
