There are a couple reports from the Israeli side, and they're quite interesting to read.
My favorite part is where the IDF very briefly admits that its radar people got USS Liberty's speed wrong by a factor of more than two, but then spends several pages complaining about Liberty looking Egyptian.

It's misleading. Visual identification of surface targets by aircraft (especially jets) is notoriously bad, and the US intercepted Israeli radio messages that described USS Liberty as an "Egyptian warship" until nearly an hour after the attack was over.
