Did not know that cumin was a mostly TexMex thing. Huh For those playing the home game; Mexican food in America is just as prone to regionality, mutation, bastardization, and fusion as any other cuisine unfortunate enough to wash up on these shores So happens, Mexican was here first.

That's why you see cumin playing a role in Tex-Mex but rarely in traditional Mexican food. And Tex-Mex is often variations of dishes covered in chili con carne or cheddar cheese (enchiladas, burritos, nachos), which you don't see in traditional Mexican.
