I've been following B. Dylan Hollis' cooking antics for a few years now, as he remakes dishes from bygone eras of both Europe and the US. It's 50/50 discovering joys of simple cooking and pre-war abominations. I'm currently watching a 30 minute vid of him going through a Wyoming all-beef cookbook.
