The great New Yorker essayist Calvin Trillin once wrote about a Romanian-Jewish diner where the lead cook was (maybe; remembering) Puerto Rican. When Trillin asked him how he figured out Eastern European Jewish food, the cook said, “I learned it from a Black guy who was here.” That is New York.
