This also applies to the awful political economy of the Nova boosters that suggests "ultra-processing" is somehow particularly motivated by profits. Who is currently trying to overturn state animal welfare legislation? The meat industry, which produces "unprocessed" products.

I regret to inform you that the absolute worst people in food academia have teamed up to write a truly cynical screed against meat reduction.
The Nova / "ultra-processing" schema is not fit for purpose for adjudicating the healthfulness or sustainability of foods.
