2 zucchinis
olive oil
salt, black pepper, garlic
1 1/2 cups cooked chickpeas
1 tbsp lemon juice
1/2 tsp ea cumin, paprika, oregano
1/2 cup #vegan cheese
1 red onion
1 cup spinach
