Dino tibs day. 24 hour chill after trimming. Mustard base. White lightning rub. White oak base and we'll sneak in a bit of maple (225F). Wrapping at 170F (hit with the spray and wagyu tallow,) and pulling it up to 275F for a bit then a 1 hour rest. LFG!
