so as far as I can tell pasteurizing honey is literally just to make it easier to produce, ship, and sell at scale. you can buy raw honey and, unlike raw milk, there do not appear to be any risks to doing so (though, amusingly, apparently there is no legal standard for labeling honey "raw")
